bought a big fat prime ribeye last Friday and cooked it up. It was wonderful. Prime cost me about $10 more than a higher end choice cut, but it's worth it.
Salt, Pepper, a little brown sugar to help get some good caramelization, and a touch of cayenne pepper.

the first time i tried searing a steak then popping it in the oven was when i finally realized how you should cook a steak.
2-3 minutes each side
pop it in the oven for 15-17 minutes on 375
let it rest for 5

On V-day, my girl cooked me a 3/4 lb filet mignon with a white wine'n'brandy mushroom sauce, salt, pepper, and secret herbs and spices. Tonight she's cooking me 1/4 lb filet mignon in some secret marinade.
OFF I GO.
edit: yeah she won't tell me what's in the marinade.

At least once in my life, I have to try one of those ludicrous steak houses they have out in Vegas. For instance, Prime Steakhouse in the Bellagio. $230.00. 9oz of A-5 Grade 12 Yagyu beef. Your uncle's "famous" t-bone can't fuck with this. They sear this shit in temperatures that melt low grades of steel, then they immerse it in butter for hours at somewhere around 200 degrees. Comes with some mashed pommes guaran-fuckin-teed to be better then your mother's.

Growing up I hated steak. My Dad is the pickiest eater and everything he cooked would always be overly well done and dried out.
When I finally had a medium rare steak cooked for me it was like an epiphany.

agreed. there's is never a time when steak is worth that much. you can go to the french laundry for less than that and have one of the best meals of your life

If I don't bbq it, then that's what i do. But not for 17 minutes. If you like cooking steaks, one of these can be your best friend:

I know some of you will say that you just poke the meat or whatever to tell when it's done....but this is exact. No cutting into the meat or poking it with your fingers.
